The leaves of the Inga edulis tree are compound with up to 20 pairs of leaflets that are oblong in shape smooth and glossy and about 5-10 cm in length. The pod is filled with a fluffy white pulp that surrounds large flat black seeds. The pulp is sweet and juicy with a flavor similar to vanilla ice cream which is why the tree is often called the “ice cream bean.” The Inga edulis tree is an important food source for both humans and animals.
